Tri-tip roasts come from the sirloin and have that iconic triangular shape. A thicker roast, at about 3 pounds, tri-tips are a great cut for your favorite marinade or dry rub. Perfect on the grill or seared and finished in the oven, tri-tips want all that delicious caramelization on the outside but like to be cooked just past medium rare. Left over tri-tip makes excellent sandwiches, so you might want to cook two! for best results temper for at least an hour before cooking, rest your meat after cooking for 10-15 minutes, and then slice across the grain.
