With a thick fat cap and solid "eye" of fat running right through the middle, ribeye is prized for its tenderness and robust flavor. Ribeye steaks want high heat like a grill, cast iron pan, or broiler to maximize caramelization and are excellent cooked to any temperature. Ribeyes like to be tempered before cooking.
