Oxtail is very limited, only one per cow. It has become very popular over the last few years due in part to its unique attributes: high in collagen and gelatin, and well marbled meat that tenderizes without drying out. Break out your crock pot or pressure cooker because oxtail needs a long moist cooking method to break down all of that connective tissue.
