Not for the faint of heart, beef heart is a very limited (only one per cow), lean and well used muscle that requires some special treatment. We recommend soaking in milk in the refrigerator for 24-72 hours. After soaking, rinse the heart and cut long-thin slices to skewer and grill hot and quick. It has great flavor and a unique texture. Also a great, lean addition to homemade dog food.
