Lamb shoulder is a tougher cut as it comes from a heavily used muscle, and therefore well marbled with lots of connective tissue. And as such, it is flavorful and juicy. You can leave it as a whole roast, or cut it into smaller pieces for slow cooking in soups, stews and tagines. Leftovers are awesome shredded and used in tacos, or sliced thin and served in pitas with salad and tzatziki sauce. You can't go wrong with this cut as it's also very economical.
