The lamb saddle is a showstopper cut, perfect for special occasions or when you want to impress your guests with a beautifully tender, flavorful roast. It’s a whole piece of lamb that includes both sides of the loin and the back bone, behind the rack section of ribs. It is the same cut that yields our lamb loin chops (t-bones). Typically weighing around 2 to 3 pounds, the meat is juicy, tender, and packed with flavor, making it a favorite for roasting or grilling. A quick sear on the stovetop followed by a roast in the oven helps to lock in those savory juices and gives the meat a golden, crispy crust. It’s best served medium-rare to medium, and don’t forget to let it rest for 10 minutes after cooking to keep it juicy. Elegant, delicious, and totally worth the effort!
