Elegant and incredibly flavorful, our favorite way to prepare them is to lightly salt and pepper them and pan sear them (or grill them) at high heat for about 4 minutes per side. They are so delicious and fun to eat by holding that long bone like a handle. We typically recommend at least 2 "pops" per person. Remember, since they are grass-fed and finished, our motto is, "simply walk them by the fire" so that they are still very pink in the middle. You won't be disappointed!
