The hanging tender was known as a "butcher's steak", and there's only one of these tender muscles per cow. Also known as a hanger steak, it is found "hanging" from the cow's diaphragm and kidney, below the tenderloin, and is made up of two long, elliptical pieces of meat that are connected by a piece of silver skin. Its flavor is similar to that of the flank and shines when grilled, pan-seared or broiled, although some chefs contend it is best cut to dice, brown in butter and simmer into a pot of bolognese or chili. Cook medium-rare, or between 130-135 degrees, allow your hanger to rest 5-10 minutes before slicing against the grain. It is great value steak for such a well marbled, and versatile cut. Usually around 1 lb, it feeds 2-4 people.
