The boneless leg of lamb is the most lean cut of lamb, and one of the most versatile. If you're lucky enough to have leftovers, try it chopped and seasoned for tacos, sliced thin for lamb sandwiches, or added to your favorite pasta dish. Marinating that includes an acid such as lemon juice will assist in the tenderness of the meat. Always rest your leg for about 10 minutes. This allows the juices to redistribute throughout the meat. An ideal instant temperature for medium-rare is 140 degrees. If you like yours a little more well done, let it reach a temp of 150 degrees, or for well-done strive for 160 degrees. Remember to give it the rest it deserves! Roast whole, cut into kabob, chops or smaller roasts, butterfly for grilling. You can't go wrong with this cut of lamb!
