The top round is an inexpensive cut from the cow's upper rear leg thigh, above the bottom round and eye of round. It is a leaner cut, and therefore tender and flavorful. It is classically roasted and sliced, but it is a very versatile cut, lending itself well to braising, slow cooking and stewing as well, all of which help dissolve the connective tissue, making it more tender.
