Beef tongue is treasured by many cultures around the world. The cooking process is very straightforward: season for 12 hours and poach in court bouillon* until tender. When cool, peel the outer layer to reveal the tender muscle below. The meat can be chopped and sauteed with some cumin and chili for lengua tacos, or sliced and grilled, served with whole grain mustard and creme fraiche.

*Don’t let the fancy French name fool you. Court bouillon, which means “short broth” in French, is simply a flavorful liquid that is used to poach fish, seafood, chicken, beef and sometimes fruit. The liquid often contains water (however almost any liquid can be used) and usually an acid (such as wine, vinegar, or citrus). Aromatics, such as herbs, zest, and spices are often used to add flavor and personalize dishes.
