Skirt steak is a well-used muscle which means it is robust in flavor, but also has enough marbling to give it a delicious tenderness when sliced across the grain. Often used for fajitas or carne asada, but it is just as good sliced and topped with an herb butter, horse radish cream or chimichuri sauce. Skirt is a long thin muscle, best cut into sections of even thickness for cooking a slicing. Always remember to rest your cooked steak before slicing.
