Beef flap (aka bavette) is a chef's value cut, and a great choice for hosting or for amazing leftovers. Similar to skirt and flank steak, flap is a little larger and lends well to applications like fajitas or steak salad. Flap is a wide, thin muscle, best cut into sections of equal thickness and grilled or seared. Remember to rest your steak for a few minutes after cooking and be certain to cut across the grain.
